How To Make Crispy Chicken with Pancetta & Butter Beans

Ingredients
- 4 chicken breasts
- 8 slices of pancetta
- 1 can of butter beans, drained and rinsed
- 2 tablespoons of olive oil
- Salt and pepper, to taste
- 1 teaspoon of paprika
- 1 teaspoon of dried thyme
- 1 lemon, sliced
Instructions

Preheat the oven to 400°F (200°C).

Wrap each chicken breast with 2 slices of pancetta, securing with toothpicks if needed.

In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until the pancetta is crispy and the chicken is browned, about 3-4 minutes per side.

Remove the chicken from the skillet and set aside. In the same skillet, add the butter beans, paprika, dried thyme, salt, and pepper. Cook for 2-3 minutes, until heated through.

Transfer the chicken and the skillet to the preheated oven. Bake for 15-20 minutes, or until the chicken is cooked through and no longer pink in the center.

Serve the crispy chicken with the pancetta and butter beans, garnished with lemon slices.
