Ingredients

  • 500g lamb, cut into small pieces
  • 2 cups basmati rice
  • 2 onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit
  • 1 tsp turmeric powder
  • 2 tsp biryani masala powder
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 4 cardamom pods
  • 4 cloves
  • 2 cinnamon sticks
  • 3 cups water
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • Salt to taste
  • Oil for cooking

Instructions

  1. Rinse the basmati rice and soak it in water for 30 minutes. Drain and set aside.

  2. Heat oil in a large pan over medium heat. Add the cumin seeds, cardamom pods, cloves, and cinnamon sticks. Cook until fragrant.

  3. Add the sliced onions and sauté until golden brown.

  4. Add the minced garlic, grated ginger, and green chilies. Cook for a minute.

  5. Add the lamb pieces and cook until they are browned on all sides.

  6. Add the turmeric powder, biryani masala powder, and red chili powder. Mix well to coat the lamb.

  7. Add the soaked rice and mix gently.

  8. Pour in the water and season with salt. Bring to a boil.

  9. Reduce the heat to low, cover the pan, and cook for 15-20 minutes or until the rice is cooked and the lamb is tender.

  10. Remove from heat and let it rest for 5 minutes.

  11. Fluff the rice with a fork and garnish with chopped cilantro and mint leaves.

  12. Serve hot with raita or salad.
