How To Make Baked Aubergines Stuffed with Minced Lamb

Ingredients
- 2 large aubergines
- 500g minced lamb
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, finely chopped
- 1 tsp cumin powder
- 1 tsp paprika
- 1/2 tsp cinnamon
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley, for garnish
Instructions

Preheat the oven to 200°C (400°F).

Cut the aubergines in half lengthwise and scoop out the flesh, leaving a shell. Chop the flesh and set aside.

Heat the olive oil in a pan over medium heat. Add the minced lamb and cook until browned.

Add the chopped onion, garlic, and red bell pepper to the pan and cook until softened.

Add the chopped aubergine flesh, cumin powder, paprika, cinnamon, salt, and pepper. Cook for another 5 minutes, until the flavors are well combined.

Stuff the aubergine shells with the minced lamb mixture and place them in a baking dish.

Bake in the preheated oven for 30-40 minutes, until the aubergines are tender and lightly browned.

Garnish with fresh parsley before serving.
