How To Make Easy Roast Leg of Lamb

Ingredients
- 1 4-5 pound leg of lamb
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- Salt and pepper
Instructions

Preheat the oven to 375°F (190°C).

In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper.

Place the leg of lamb on a rack in a roasting pan.

Rub the garlic and herb mixture all over the lamb, making sure to coat it evenly.

Roast the lamb in the preheated oven for about 1 hour 30 minutes, or until a meat thermometer inserted into the thickest part of the meat reads 145°F (63°C) for medium-rare, or to your desired level of doneness.

Remove the lamb from the oven and let it rest for about 10 minutes before slicing.
