Ingredients

  • 1 leg of lamb (4-5 pounds)
  • 4 cloves of garlic, minced
  • 2 tablespoons of fresh rosemary, chopped
  • 2 tablespoons of fresh thyme, chopped
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper

Instructions

  1. Preheat the oven to 325°F (165°C).

  2. In a small bowl, mix together the minced garlic, rosemary, thyme, olive oil, salt, and black pepper.

  3. Place the leg of lamb on a roasting rack in a roasting pan.

  4. Rub the garlic-herb mixture all over the lamb, making sure to coat it evenly.

  5. Roast the lamb in the preheated oven for about 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.

  6. Remove the lamb from the oven and let it rest for 10 minutes before carving.

  7. Slice the lamb and serve with your favorite side dishes.
