How To Make Ratatouille hotpot

Ingredients

  • 1 large eggplant, cubed
  • 2 medium zucchini, sliced
  • 2 yellow bell peppers, sliced
  • 1 large onion, sliced
  • 4 cloves of garlic, minced
  • 1 can (400g) of diced tomatoes
  • 2 tablespoons of tomato paste
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onions and garlic, sauté until fragrant and onions are translucent.

  2. Add eggplant, zucchini, and bell peppers to the pot. Cook for 5 minutes, stirring occasionally.

  3. Stir in the diced tomatoes, tomato paste, dried thyme, basil, oregano, salt, and pepper. Cover and simmer for 30 minutes, or until the vegetables are tender.

  4. Serve hot in bowls, garnished with fresh herbs if desired.
