How To Make Lamb, Black Pudding & Mustard Hotpot

Ingredients
- 500g lamb shoulder, diced
- 200g black pudding, sliced
- 2 onions, finely chopped
- 3 cloves of garlic, minced
- 2 carrots, diced
- 2 parsnips, diced
- 2 potatoes, peeled and cubed
- 1 tbsp Dijon mustard
- 500ml beef broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Preheat the oven to 160°C (320°F).

Heat a large oven-safe pot on medium heat and add the lamb. Cook until browned on all sides.

Add the black pudding, onions, and garlic to the pot. Cook until the onions are softened.

Stir in the carrots, parsnips, potatoes, and Dijon mustard.

Pour in the beef broth and season with salt and pepper. Bring to a simmer.

Cover the pot with a lid and transfer to the preheated oven. Cook for 2 hours or until the lamb is tender.

Remove from the oven and garnish with fresh parsley before serving.
