How To Make Fennel Seed and Cherry Biscotti

Crunchy biscotti with the sweet tang of cherries and the warm, aromatic flavor of fennel seeds.

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 tbsp unsalted butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp fennel seeds
  • 1/3 cup dried cherries, chopped

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together the flour, baking powder, and salt.

  3. In a separate large bowl, beat the granulated sugar, brown sugar, and butter until creamy.

  4. Add the egg and vanilla extract to the butter mixture and beat until well-combined.

  5. Gradually add the flour mixture, mixing until just combined.

  6. Add the fennel seeds and chopped cherries, stirring until well-distributed.

  7. Turn the dough onto the prepared baking sheet and use your hands to shape it into a log, about 12 inches long and 2 inches wide.

  8. Bake for 25-30 minutes, until the dough is firm and lightly golden.

  9. Remove from the oven and let the log cool for 10 minutes.

  10. Use a sharp knife to cut the log diagonally into 1/2-inch thick slices.

  11. Arrange the slices on the baking sheet, cut-side down, and bake for an additional 10-12 minutes, until lightly golden.

  12. Serve and enjoy!
