How To Make Fennel Seed and Cherry Biscotti
Crunchy biscotti with the sweet tang of cherries and the warm, aromatic flavor of fennel seeds.

Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar
- 2 tbsp unsalted butter, softened
- 1 egg
- 1 tsp vanilla extract
- 1 tsp fennel seeds
- 1/3 cup dried cherries, chopped
Instructions

Preheat the oven to 350°F. Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, beat the granulated sugar, brown sugar, and butter until creamy.

Add the egg and vanilla extract to the butter mixture and beat until well-combined.

Gradually add the flour mixture, mixing until just combined.

Add the fennel seeds and chopped cherries, stirring until well-distributed.

Turn the dough onto the prepared baking sheet and use your hands to shape it into a log, about 12 inches long and 2 inches wide.

Bake for 25-30 minutes, until the dough is firm and lightly golden.

Remove from the oven and let the log cool for 10 minutes.

Use a sharp knife to cut the log diagonally into 1/2-inch thick slices.

Arrange the slices on the baking sheet, cut-side down, and bake for an additional 10-12 minutes, until lightly golden.
