Ingredients

  • 1 red onion, chopped into wedges
  • 2 bell peppers, seeded and sliced
  • 2 zucchinis, sliced
  • 2 cups of cherry tomatoes
  • 2 tbsp of olive oil
  • 1 tbsp of dried marjoram
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F.

  2. Combine the onion, bell pepper, zucchini, and cherry tomatoes in a large bowl.

  3. Add olive oil, marjoram, salt, and pepper and toss to coat evenly.

  4. Spread vegetables in a single layer on a baking sheet.
