Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 cup vegetable broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode. Add olive oil, onion, and garlic. Cook until softened, about 2 minutes.

  2. Add the bell pepper and zucchini. Cook for another 2 minutes.

  3. Stir in the diced tomatoes, black beans, kidney beans, vegetable broth, chili powder, cumin, salt, and pepper.

  4. Close the Instant Pot lid and set it to manual high pressure for 10 minutes.

  5. Once done, let the pressure release naturally for 10 minutes before manually releasing the remaining pressure.

  6. Give the chili a good stir and serve hot with your favorite toppings.
