How To Make Vegetarian Instant Pot Quinoa Recipe
Flavorful, protein-packed vegetarian meal made with quinoa, black beans, and vegetables, cooked in an Instant Pot.

Ingredients
- 1 cup quinoa
- 1 can (15 oz) black beans, drained and rinsed
- 1 red bell pepper, chopped
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Lime wedges, chopped cilantro, diced avocado, for serving
Instructions

Add quinoa, black beans, red bell pepper, yellow onion, garlic, vegetable broth, cumin, chili powder, paprika, salt, and pepper to the Instant Pot. Stir to combine.

Close the Instant Pot lid and set the valve to sealing. Cook on high pressure for 10 minutes, then allow the pressure to release naturally for 5 minutes.

Carefully release the remaining pressure by turning the valve to venting. Remove the lid and fluff the quinoa with a fork.

Serve hot with lime wedges, chopped cilantro, and diced avocado.
