  • 1 cup unsweetened almond milk
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 8 slices of vegan bread
  • Coconut oil for cooking
  • Fresh berries and maple syrup for serving

Instructions

  1. In a shallow bowl, whisk together almond milk, ground flaxseed, vanilla extract, maple syrup, and cinnamon.

  2. Heat a non-stick skillet or griddle over medium heat and add a drizzle of coconut oil.

  3. Dip each slice of bread into the almond milk mixture, ensuring it is fully coated on both sides.

  4. Cook the soaked bread on the skillet for 2-3 minutes per side, or until golden brown and crispy.

  5. Repeat with the remaining slices of bread, adding more coconut oil as needed.

  6. Serve the Vegan French toast hot with fresh berries and a drizzle of maple syrup.
