Ingredients

  • 2 cups fresh or frozen peas
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh mint
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. If using frozen peas, thaw them according to package instructions. If using fresh peas, blanch them in boiling water for 2 minutes, then drain and rinse with cold water.

  2. In a large bowl, combine the peas, cherry tomatoes, cucumber, red onion, and mint.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  4. Pour the dressing over the pea mixture and toss gently to coat.

  5. Sprinkle the crumbled feta cheese over the top.

  6. Serve immediately or refrigerate until ready to serve.
