Ingredients

  • 2 cups lima beans
  • 2 cups corn kernels
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. In a large pot, bring water to a boil and cook lima beans until tender. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add onions and bell peppers, and sauté until softened.

  3. Add minced garlic and cook for an additional minute.

  4. Add corn kernels and cooked lima beans to the skillet. Stir well to combine.

  5. Season with salt and black pepper. Cook for 10 minutes, stirring occasionally.

  6. Sprinkle with chopped parsley before serving.
