Ingredients

  • 1 cup green lentils
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the green lentils under cold water and set aside.

  2. Heat the olive oil in a large pan over medium heat. Add the diced onion and minced garlic, and cook until softened, about 5 minutes.

  3. Add the cumin, coriander, turmeric, and cayenne pepper to the pan and cook for another minute until fragrant.

  4. Stir in the diced tomatoes and vegetable broth, and bring to a simmer.

  5. Add the green lentils to the pan and season with salt and pepper. Cover and cook for 35-40 minutes, or until the lentils are tender.

  6. Serve the Spiced Green Lentil Ragoût hot, garnished with fresh cilantro.
