How To Make Spiced Green Lentil Ragoût

Ingredients
- 1 cup green lentils
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 can diced tomatoes
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Rinse the green lentils under cold water and set aside.

Heat the olive oil in a large pan over medium heat. Add the diced onion and minced garlic, and cook until softened, about 5 minutes.

Add the cumin, coriander, turmeric, and cayenne pepper to the pan and cook for another minute until fragrant.

Stir in the diced tomatoes and vegetable broth, and bring to a simmer.

Add the green lentils to the pan and season with salt and pepper. Cover and cook for 35-40 minutes, or until the lentils are tender.

Serve the Spiced Green Lentil Ragoût hot, garnished with fresh cilantro.
