How To Make Smoky Spanish tomato & garlic dip

Ingredients
- 4 ripe tomatoes
- 4 cloves of garlic
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Preheat the oven to 400°F (200°C).

Cut the tomatoes in half and place them on a baking sheet, cut side up.

Slice the top off each garlic clove and place them on the baking sheet with the tomatoes.

Drizzle olive oil over the tomatoes and garlic, then sprinkle with smoked paprika, cumin, cayenne pepper, salt, and pepper.

Roast in the oven for 30 minutes, or until the tomatoes are soft and slightly charred.

Remove from the oven and let cool slightly.

Transfer the roasted tomatoes and garlic to a food processor or blender and blend until smooth.

Taste and adjust the seasonings if needed.

Transfer the dip to a serving bowl, garnish with fresh parsley, and serve with bread or vegetables.
