How To Make Minestrone Pasta Pot

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 zucchini, chopped
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 cup small shell pasta
- 1 can (14 oz) cannellini beans, drained and rinsed
- 1 cup fresh spinach or kale, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions

Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until fragrant and translucent.

Add chopped carrots, celery, and zucchini. Cook for 5 minutes, until slightly softened.

Stir in diced tomatoes with their juices, vegetable broth, and pasta. Bring to a boil, then reduce heat and simmer for 10-15 minutes or until pasta is cooked.

Add cannellini beans and chopped spinach or kale. Cook for an additional 5 minutes until heated through and wilted.

Season with salt and pepper to taste.
