Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup small shell pasta
  • 1 can (14 oz) cannellini beans, drained and rinsed
  • 1 cup fresh spinach or kale, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until fragrant and translucent.

  2. Add chopped carrots, celery, and zucchini. Cook for 5 minutes, until slightly softened.

  3. Stir in diced tomatoes with their juices, vegetable broth, and pasta. Bring to a boil, then reduce heat and simmer for 10-15 minutes or until pasta is cooked.

  4. Add cannellini beans and chopped spinach or kale. Cook for an additional 5 minutes until heated through and wilted.

  5. Season with salt and pepper to taste.

  6. Serve hot, topped with grated Parmesan cheese.
