How To Make Roasted Pepper & Halloumi Wraps

Ingredients
- 4 large tortillas
- 2 bell peppers, sliced
- 1 red onion, sliced
- 200g halloumi cheese, sliced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- 4 tbsp tzatziki sauce
- Fresh herbs for garnish (optional)
Instructions

Preheat the oven to 425°F (220°C).

Place the bell peppers and red onion slices on a baking sheet. Drizzle with olive oil, sprinkle with smoked paprika, salt, and pepper. Toss to coat.

Roast the vegetables in the preheated oven for 20-25 minutes, until they are charred and softened.

While the vegetables are roasting, heat a grill pan over medium heat. Add the halloumi cheese slices and grill for 2-3 minutes on each side, until golden brown.

Warm the tortillas in a dry skillet or microwave for a few seconds.

Spread 1 tablespoon of tzatziki sauce onto each tortilla.

Divide the roasted peppers, grilled halloumi cheese, and red onions between the tortillas.

Roll up the tortillas tightly, tucking in the sides as you go.

Cut each wrap in half diagonally and serve immediately.

Garnish with fresh herbs if desired.
