How To Make Canned Chicken and Black Bean Quesadillas Recipe

A satisfying and easy dish featuring canned chicken and black beans in a crispy and cheesy tortilla.

Serves:

Ingredients

  • 1 can of cooked chicken breast, drained
  • 1 can of black beans, drained and rinsed
  • 1/2 cup of salsa
  • 1 tsp of chili powder
  • 1/2 tsp of cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups of shredded cheddar cheese
  • 2 tbsp of vegetable oil

Instructions

  1. In a mixing bowl, combine canned chicken, black beans, salsa, chili powder, cumin, salt, and pepper.

  2. Heat pan over medium heat and add vegetable oil.

  3. Place 1 tortilla in the pan, sprinkle 1/2 cup of cheese on one half of the tortilla.

  4. Spoon chicken and black bean mixture over the cheese and top with another 1/2 cup of cheese.

  5. Fold the tortilla in half and press down with a spatula to flatten the quesadilla.

  6. Cook for 2-3 minutes on each side, or until golden brown and crispy.

  7. Repeat with remaining tortillas and filling.

  8. Cut into quarters and serve hot.
