Ingredients

  • 1 cup polenta
  • 4 cups vegetable broth
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large saucepan, bring the vegetable broth to a boil.

  2. Gradually whisk in the polenta, stirring constantly to avoid lumps.

  3. Reduce heat to low and simmer for 30 minutes, stirring occasionally.

  4. Stir in the chopped spinach and cook for an additional 5 minutes, until wilted.

  5. Remove from heat and stir in the Parmesan cheese and heavy cream.

  6. Season with salt and pepper to taste.
