How To Make Asparagus Fries & Baconnaise

Ingredients

  • 1 bunch of asparagus
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mayonnaise
  • 4 slices of bacon, cooked and crumbled
  • 1 tbsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. Trim the tough ends of the asparagus spears and set aside.

  3. In a shallow bowl, beat the eggs with a pinch of salt and pepper.

  4. In a separate bowl, combine the breadcrumbs and grated Parmesan.

  5. Dip each asparagus spear into the beaten eggs, then roll in the breadcrumb mixture, pressing lightly to adhere.

  6. Place the coated asparagus spears onto the prepared baking sheet, spacing them evenly.

  7. Bake in the preheated oven for 15-20 minutes, or until the asparagus is tender and the coating is golden brown and crispy.

  8. While the asparagus is baking, prepare the baconnaise by combining the mayonnaise, crumbled bacon, chopped parsley, and a pinch of salt and pepper in a small bowl.

  9. Serve the crispy asparagus fries with the baconnaise dipping sauce.
