How To Make 5-a-day Tagine

Ingredients
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 2 carrots, sliced
- 1 zucchini, sliced
- 1 eggplant, diced
- 1 can of diced tomatoes
- 1 cup of vegetable broth
- 2 tsp of cumin
- 1 tsp of paprika
- 1 tsp of turmeric
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

In a large pot, sauté the onion and garlic until they become translucent.

Add the red bell pepper, carrots, zucchini, and eggplant. Cook for 5 minutes.

Stir in the diced tomatoes, vegetable broth, cumin, paprika, turmeric, salt, and pepper.

Bring the mixture to a boil, then reduce the heat and let it simmer for 45 minutes, or until the vegetables are tender.

Serve the tagine hot, garnished with fresh cilantro.
