How To Make 5-a-day Tagine

Serves:

Ingredients

  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • 1 eggplant, diced
  • 1 can of diced tomatoes
  • 1 cup of vegetable broth
  • 2 tsp of cumin
  • 1 tsp of paprika
  • 1 tsp of turmeric
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until they become translucent.

  2. Add the red bell pepper, carrots, zucchini, and eggplant. Cook for 5 minutes.

  3. Stir in the diced tomatoes, vegetable broth, cumin, paprika, turmeric, salt, and pepper.

  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 45 minutes, or until the vegetables are tender.

  5. Serve the tagine hot, garnished with fresh cilantro.
