How To Make Vegan Sweet Potato Soup Recipe
A creamy and comforting soup made with wholesome sweet potatoes.

Ingredients
- 3 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can coconut milk
- 1 tbsp olive oil
- 1 tsp ground cumin
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a large pot, heat olive oil over medium heat.

Add onion and garlic and sauté until translucent.

Add sweet potatoes and cumin and stir to combine.

Pour vegetable broth into the pot and bring to a boil.

Reduce heat to low and simmer for 20-25 minutes, or until sweet potatoes are fork-tender.

Add coconut milk to the pot and stir.

Use an immersion blender or transfer soup to a blender and blend until smooth.

Season with salt and pepper to taste.
