  • 2 cups almond flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp sweetener (such as honey or maple syrup)
  • 4 eggs
  • 1/2 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together almond flour, baking powder, salt, and sweetener.

  2. In a separate bowl, beat eggs. Add almond milk and vanilla extract to the beaten eggs and mix well.

  3. Pour the wet mixture into the dry mixture and stir until well combined.

  4. Heat a non-stick skillet or griddle over medium heat and add butter or oil.

  5. Drop batter onto the skillet, about 1/4 cup at a time, to form pancakes. Cook until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

  6. Repeat with the remaining batter.

  7. Serve the pancakes hot with your favorite toppings, such as fresh berries, maple syrup, or whipped cream.
