Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 head cabbage, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the onion and garlic and sauté until tender.

  3. Add the cabbage, carrots, and celery and cook until the veggies begin to soften.

  4. Add the diced tomatoes, vegetable broth, thyme, salt, and pepper.

  5. Bring to a boil, then reduce heat to low and let simmer for 20 minutes.
