  • 3 lemons
  • 3/4 cup sugar
  • 1/4 cup unsalted butter
  • 3 large eggs

Instructions

  1. Zest and juice the lemons.

  2. In a saucepan, combine the lemon juice, zest, sugar, and butter.

  3. Cook over medium heat, stirring constantly, until the sugar is dissolved and the mixture thickens.

  4. In a separate bowl, whisk the eggs.

  5. Slowly pour the hot lemon mixture into the eggs, whisking constantly.

  6. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until thickened.

  7. Remove from heat and let cool before serving.
