Ingredients

  • 3 lemons, zest and juice
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 3 large eggs

Instructions

  1. In a heatproof bowl, whisk together the lemon zest, lemon juice, melted butter, granulated sugar, and eggs.

  2. Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl does not touch the water.

  3. Cook the mixture over medium heat, whisking constantly, until thickened, about 10-15 minutes.

  4. Remove the bowl from the heat and let the lemon curd cool to room temperature, stirring occasionally.

  5. Once cooled, transfer the lemon curd to a jar or airtight container and refrigerate for at least 2 hours before serving.
