Ingredients
- 3 lemons, zest and juice
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 3 large eggs

In a heatproof bowl, whisk together the lemon zest, lemon juice, melted butter, granulated sugar, and eggs.

Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl does not touch the water.

Cook the mixture over medium heat, whisking constantly, until thickened, about 10-15 minutes.

Remove the bowl from the heat and let the lemon curd cool to room temperature, stirring occasionally.
