Ingredients

  • 8 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/2 onion, diced
  • 1 jalapeño pepper, diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 1 avocado, peeled and diced
  • Salsa and sour cream, for serving

Instructions

  1. In a large bowl, whisk together the eggs, milk, salt, and pepper.

  2. In a large non-stick skillet over medium heat, sauté the bell peppers, onion, and jalapeño peppers until they are tender, about 5 minutes.

  3. Pour the egg mixture into the skillet and stir frequently until the eggs are cooked through and scrambled, about 5-7 minutes.

  4. Sprinkle the shredded cheddar cheese over the eggs and let it melt.

  5. Top with chopped cilantro and diced avocado.

  6. Serve with salsa and sour cream on the side.
