  • 4 boneless, skinless chicken breasts
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1/4 cup chicken broth

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Season chicken with salt and pepper.

  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 2-3 minutes per side until browned.

  4. Transfer chicken to a baking dish.

  5. In the same skillet, add garlic and cook for 1 minute until fragrant.

  6. Add lemon juice, lemon zest, honey, Dijon mustard, and chicken broth to the skillet. Stir to combine.

  7. Pour the mixture over the chicken.

  8. Bake for 20-25 minutes until chicken is cooked through.
