  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced

Instructions

  1. In a medium saucepan, bring the rice and water to a boil.

  2. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water has been absorbed.

  3. In a separate bowl, mix together the olive oil, salt, black pepper, cilantro, and lime juice.

  4. Fluff the cooked rice with a fork and pour the cilantro-lime mixture over it.

  5. Stir until well combined and serve.
