- 1 cup long-grain white rice
- 2 cups water
- 1 tbsp olive oil
- 1/4 tsp salt

- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
Instructions

In a medium saucepan, bring the rice and water to a boil.

Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water has been absorbed.

In a separate bowl, mix together the olive oil, salt, black pepper, cilantro, and lime juice.
