This classic Italian appetizer is a perfect combination of fresh tomatoes, basil, garlic, and balsamic vinegar.

  • 4 ripe tomatoes, diced
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra-virgin olive oil
  • 2 garlic cloves, minced
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste
  • 1 French baguette, sliced
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Preheat the oven to 400°F.

  2. In a mixing bowl, combine the diced tomatoes, balsamic vinegar, olive oil, garlic, basil, salt, and pepper. Let the mixture sit for 5 minutes to allow the flavors to meld together.

  3. Arrange the baguette slices on a baking sheet. Brush each slice with olive oil and sprinkle with salt.

  4. Toast the baguette slices in the oven for 5-7 minutes, or until lightly crispy.

  5. Spoon the tomato mixture on top of the baguette slices and sprinkle with Parmesan cheese.

  6. Serve immediately and enjoy.
