How To Make Spinach Protein Pancakes

Ingredients

  • 2 cups spinach, cooked and chopped
  • 4 eggs
  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/4 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray

Instructions

  1. In a blender, combine the spinach, eggs, cottage cheese, rolled oats, almond flour, baking powder, salt, and black pepper. Blend until smooth.

  2. Heat a non-stick skillet over medium heat and lightly coat with cooking spray.

  3. Pour 1/4 cup of the batter onto the skillet for each pancake.

  4. Cook for about 2 minutes on each side, or until golden brown.

  5. Repeat with the remaining batter.

  6. Serve the spinach protein pancakes warm with your favorite toppings, such as Greek yogurt or sliced avocado.
