Preparation: 10 minutes
Cooking: 20 minutes
Total: 2 hours 30 minutes

Serves:

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • pinch of salt
  • 1 tbsp rose water
  • 5 egg yolks

Instructions

  1. In a large saucepan, heat cream, milk, sugar, and salt over low heat until sugar dissolves.

  2. In a separate bowl, whisk together egg yolks.

  3. Slowly add the warm cream mixture to the eggs, whisking constantly.

  4. Pour the mixture back into the saucepan and cook over medium-low heat, stirring continuously until it thickens and coats the back of a spoon (about 10 minutes).

  5. Remove from heat and stir in rose water.

  6. Strain mixture through a fine-mesh sieve into a large bowl and let it cool to room temperature.

  7. Once cooled, chill the mixture in the refrigerator for at least 2 hours (or overnight).

  8. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.

  9. Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours (or until firm).
