  • 1 sheet of store-bought puff pastry, thawed
  • 8 fresh figs, sliced
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • 4 tbsp goat cheese
  • Fresh mint leaves, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the puff pastry and cut it into 4 equal squares.

  3. Place the puff pastry squares on a baking sheet lined with parchment paper.

  4. In a small bowl, mix together the honey and balsamic vinegar.

  5. Brush each puff pastry square with the honey and balsamic mixture.

  6. Divide the sliced figs evenly among the puff pastry squares, placing them in the center.

  7. Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown.

  8. Remove from the oven and allow to cool slightly.

  9. Top each tartlet with a tablespoon of goat cheese and garnish with fresh mint leaves.

  10. Serve warm or at room temperature.
