How To Make Doris’ Cherry Meringue Tart

Ingredients
- 1 pre-made pie crust
- 1 cup of fresh cherries, pitted
- 1/3 cup of granulated sugar
- 3 egg whites
- 1/4 teaspoon of cream of tartar
- 1/2 cup of powdered sugar
- 1/2 teaspoon of vanilla extract
Instructions

Preheat the oven to 375°F (190°C).

Roll out the pre-made pie crust and press it into a tart pan. Trim any excess crust.

In a small saucepan, combine the cherries and granulated sugar. Cook over medium heat until the cherries release their juices and the sugar has dissolved, about 5 minutes. Remove from heat and let cool.

In a separate mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the powdered sugar and continue to beat until stiff peaks form.

Spread the cooled cherry mixture evenly onto the prepared pie crust.

Spoon the meringue mixture on top of the cherries and spread it out, making sure to seal the edges.

Bake in the preheated oven for 20-25 minutes, or until the meringue is golden brown.
