Ingredients

  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup canned pumpkin
  • 1 cup chopped walnuts (optional)
  • For the cream cheese filling:
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup butter, softened
  • 1 tsp vanilla extract
  • For the powdered sugar dusting:
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 10×15 inch jelly roll pan and line with parchment paper.

  2. In a small bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.

  3. In a large mixing bowl, beat eggs on high speed for 5 minutes until thick and lemon-colored. Gradually beat in sugar. Stir in pumpkin.

  4. Fold in the dry ingredients until just combined. Spread batter evenly onto the prepared jelly roll pan. Sprinkle with chopped walnuts if desired.

  5. Bake for 12-15 minutes or until the cake springs back when lightly touched. Remove from the oven and immediately loosen the edges of the cake. Invert the hot cake onto a clean kitchen towel sprinkled with powdered sugar. Carefully peel off the parchment paper.

  6. Roll up the cake in the towel, starting with the short side. Cool completely on a wire rack.

  7. In a medium bowl, beat the cream cheese, powdered sugar, butter, and vanilla extract until smooth and creamy.

  8. Carefully unroll the cooled cake and spread the cream cheese filling evenly over the cake. Roll up again without the towel. Place seam-side down on a serving platter.

  9. Dust with powdered sugar before serving. Slice and enjoy!
