
How To Make Flourless Muesli Muffins
Sink your teeth into these soft and moist muesli muffins! They’re packed with a fiber-filled muesli, then baked til’ golden brown for a healthier snack.
Serves:
Ingredients
- nonstick cooking spray,for greasing
- 2large eggs
- 1cupapplesauce
- ½cupGreek yogurt
- ½cupmilk,of choice
- ½cupmaple syrup
- 2tspvanilla extract
- 3cupsmuesli,plus an additional 2 tbsp, or rolled oats, divided
- 2tspbaking powder
- 1pinchsalt
Instructions

Preheat the oven to 350 degrees F. Grease a 12-cup muffin tin with cooking spray.

In a large bowl, thoroughly beat the eggs, then mix in the applesauce, Greek yogurt, milk, maple syrup, and vanilla until evenly combined.

Add 3 cups of muesli, baking powder, and salt. Mix well.

Divide the batter between the muffin cups. Sprinkle the remaining 2 tablespoons of muesli over the tops of the muffins.

Bake for 20 to 25 minutes or until golden brown.
