Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup ground almonds
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1/4 cup unsalted butter, melted
  • 1 tbsp cocoa powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, whisk together the flour, ground almonds, cocoa powder, cinnamon, ginger, cloves, baking soda, and salt.

  2. In a separate bowl, mix together the honey, brown sugar, molasses, and melted butter until well combined.

  3. Gradually add the wet ingredients to the dry ingredients, stirring until a thick dough forms.

  4. Cover the dough and refrigerate for at least 1 hour.

  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  6. Roll out the dough to a 1/4-inch thickness on a lightly floured surface.

  7. Use cookie cutters to cut out desired shapes and place them on the prepared baking sheet.

  8. Bake for 12-15 minutes or until the edges are lightly browned.

  9. Remove from the oven and let the cookies cool on a wire rack.

  10. Once cooled, dust the cookies with powdered sugar before serving.
