How To Make Tipsy Rhubarb & Blood Orange Jelly

Ingredients
- 500g rhubarb, chopped
- 4 blood oranges, juiced
- 150g sugar
- 250ml sparkling wine
- 2 gelatin sheets
- Fresh mint leaves, for garnish
Instructions

In a saucepan, combine rhubarb, blood orange juice, sugar, and sparkling wine. Cook over medium heat until rhubarb is tender, about 15 minutes.

Remove from heat and let it cool slightly. Blend the mixture until smooth.

Soak gelatin sheets in cold water for 5 minutes. Squeeze out excess water, then stir the gelatin into the warm rhubarb mixture until dissolved.

Pour the mixture into individual serving glasses or molds. Refrigerate for at least 4 hours, or until set.

Garnish with fresh mint leaves before serving.
