Ingredients

  • 1 kg fresh figs, stemmed and chopped
  • 2 cups granulated sugar
  • 1 lemon, juiced
  • 1/2 tsp vanilla extract

Instructions

  1. In a large saucepan, combine the chopped figs, sugar, lemon juice, and vanilla extract.

  2. Cook over medium heat, stirring occasionally, until the sugar has dissolved.

  3. Reduce the heat to low and simmer for about 1 hour, or until the mixture thickens and reaches a jam-like consistency.

  4. Stir occasionally to prevent sticking and burning.

  5. Remove from heat and let cool for a few minutes.

  6. Transfer the preserves to clean, sterilized jars and seal tightly.

  7. Allow the preserves to cool completely before storing in the refrigerator.
