Ingredients

  • 2 pounds fresh figs, stemmed and quartered
  • 1 cup granulated sugar
  • 1 lemon, juiced
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large saucepan, combine the figs, sugar, lemon juice, and vanilla extract. Stir well to combine.

  2. Place the saucepan over medium heat and bring the mixture to a simmer. Reduce the heat to low and cook for 45 minutes, stirring occasionally, until the figs are soft and the mixture has thickened.

  3. Remove the saucepan from the heat and let the fig mixture cool for 10 minutes.

  4. Using an immersion blender or a regular blender, carefully puree the fig mixture until smooth or desired consistency.

  5. Return the saucepan to low heat and cook for an additional 10 minutes, stirring constantly, until the preserves have thickened even more.

  6. Remove the saucepan from the heat and let the preserves cool completely.

  7. Once cooled, transfer the fig preserves to sterilized jars and seal tightly.
