Ingredients

  • 4 medium zucchinis
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Using a spiralizer or vegetable peeler, create zucchini noodles from the zucchinis. Set aside.

  2. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes, sauté for 1-2 minutes until fragrant.

  3. Add the zucchini noodles to the skillet, season with salt and black pepper. Cook for 3-4 minutes until tender but still crisp.

  4. Add cherry tomatoes to the skillet and toss to combine. Cook for an additional 2 minutes until tomatoes are heated through.

  5. Remove from heat and sprinkle grated Parmesan cheese over the zucchini noodles. Garnish with fresh basil leaves.

  6. Serve immediately and enjoy!
