How To Make Instant Pot Carrot Cake Recipe
A moist and flavorful dessert that’s easy to make in your Instant Pot.

Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 2 large eggs
- ½ cup vegetable oil
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 1 ½ cups finely grated carrots (about 3 medium carrots)
- ½ cup chopped walnuts
- Cooking spray
Instructions

In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.

In a large bowl, beat eggs, oil, sugar, and vanilla until well combined.

Gradually mix dry ingredients into the wet ingredients; stir until well combined.

Fold in the grated carrots and chopped walnuts.

Grease a 7-inch cake pan with cooking spray.

Pour the batter into the prepared pan.

Pour 1 1/2 cups of water into an Instant Pot. Set a trivet inside the Instant Pot and place the cake pan on the trivet.

Secure the lid and set the Instant Pot to cook for 35 minutes on high pressure.

After the cake is finished cooking, let the pressure release naturally for 10 minutes. Then quick release any remaining pressure.

Carefully remove the cake from the Instant Pot.

Let the cake cool before slicing and serving.
