Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup vegetable oil
  • 2 eggs
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup chopped dried figs
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F.

  2. In a medium bowl, whisk together flour, salt, baking powder, and baking soda.

  3. In another bowl, whisk together vegetable oil, eggs, brown sugar, and vanilla extract until smooth.

  4. Mix in dry ingredients until just combined. Fold in chopped figs and walnuts.

  5. Pour batter into a greased loaf pan and bake for 1 hour or until a toothpick inserted in the center comes out clean.

  6. Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.
