  • 1 1/2 cups all-purpose flour
  • 1 cup almond milk
  • 1/2 cup vegetable oil
  • 3/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.

  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.

  3. In a separate bowl, whisk together the almond milk, vegetable oil, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined.

  5. Fill each cupcake liner about 2/3 full with the batter.

  6. Bake for 18-20 minutes until a toothpick inserted in the center comes out clean.

  7. Remove from the oven and allow the cupcakes to cool completely before frosting.
