Ingredients

For Maple Bacon Cupcakes:

  • 2¾ cups cake flour, sifted
  • 1 tbsp baking powder
  • 3 large eggs, at room temperature
  • 4 cups maple syrup, (reduced to 2 cups in a saucepan)
  • ½ cup vegetable oil
  • 1 cup milk
  • 1 tsp maple flavoring
  • 5 bacon strips, cooked and chopped, plus more for topping

For Maple Frosting:

  • 6 tbsp butter
  • 4 cups powdered sugar
  • 4 tbsp pure maple syrup
  • 2 tsp maple flavoring

For Garnish:

  • bacon bits

Instructions

Maple Bacon Cupcakes:

  1. Pre-heat oven to 350 degrees F.
  2. Line a muffin tin with paper liners.
  3. In a bowl, sift the cake flour and baking powder.
  4. In a separate bowl beat the eggs to a light and fluffy consistency.
  5. Gradually add the reduced maple syrup and oil into the bowl of beaten eggs. Beat until they are well combined.
  6. Add the dry ingredients onto the bowl of wet ingredients and mix until well-combined.
  7. Stir in the milk and maple flavoring then fold the chopped bacon into the mixture.
  8. Pour the batter into the muffin tins until ¾’s full.
  9. Bake for 20 minutes or until the toothpick test comes out clean. Let the cupcakes cool on a cooling rack.

Maple Frosting:

  1. In a bowl, cream the butter and sugar until fluffy.
  2. Add in the maple syrup and maple flavoring then mix until well-combined.
  3. Transfer the frosting into the piping bag and ice the cooled cupcakes.
  4. Garnish with bacon bits and bite into the sweet yet savory Maple Bacon Cupcakes!
