  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • zest of 1 lemon
  • juice of 1 lemon
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.

  2. In a medium bowl, whisk together the flour, baking powder, and salt.

  3. In a separate bowl, cream together the butter and sugar until light and fluffy.

  4. Beat in the eggs, one at a time, followed by the vanilla extract.

  5. Gradually add the flour mixture to the butter mixture, alternating with the milk.

  6. Stir in the lemon zest and juice until well combined.

  7. Fill each cupcake liner 2/3 full with batter and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cupcakes to cool completely before filling.

  9. In a small bowl, mix powdered sugar with lemon juice to make a thick glaze.

  10. Using a piping bag or a small spoon, fill the cooled cupcakes with the lemon glaze.

  11. Optional: garnish with additional lemon zest or a dusting of powdered sugar.

  12. Serve and enjoy!
