  • 1 cup ricotta cheese
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a mixing bowl, cream together ricotta cheese, butter, and sugar until light and fluffy.

  3. Beat in the egg and vanilla extract.

  4. In a separate bowl, whisk together flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

  6. Drop spoonfuls of dough onto a greased baking sheet, spacing them about 2 inches apart.

  7. Bake for 10-12 minutes, or until the edges are lightly golden.

  8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

  9. Dust with powdered sugar before serving.
