How To Make Oaty Energy Cookies

  • 1 ½ cups rolled oats
  • ½ cup almond butter
  • ¼ cup honey
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ¼ cup dark chocolate chips
  • ¼ cup dried cranberries
  • ¼ cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a bowl, mix together the rolled oats, almond butter, honey, vanilla extract, and salt until well combined.

  3. Stir in the dark chocolate chips, dried cranberries, and chopped nuts (if using).

  4. Scoop tablespoon-sized portions of the dough and place them on the prepared baking sheet, spacing them about 2 inches apart.

  5. Flatten each portion with the back of a spoon or your palm to form a cookie shape.

  6. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

  7. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
