  • 2 cups shredded coconut
  • 2 tablespoons coconut flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup low-carb sweetener (such as erythritol or stevia)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mix together the shredded coconut, coconut flour, melted coconut oil, sweetener, eggs, vanilla extract, and salt until well combined.

  3. Scoop tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

  4. Flatten each cookie slightly with the back of a spoon.

  5. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.

  6. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
